Balsamic Pork Chops and Rice Pilaf - Yum!

I am done with the MCAT (hopefully) once and for all!  Which means, among other things, that I can get back to cooking and blogging.

Tonight was an excellent start back into it.  I had a craving for pork chops, but didn't have a recipe in particular that I wanted to use.  So I turned to my trusty friend Google which sent me to Myrecipes.com and a great Balsamic Pork Chop.  Turned out super delicious.


So the basic ingredients are pork chops (I bought ones that were already cut fairly thin), garlic, balsamic vinegar, chicken broth, and rosemary.  Also some other spices, butter, and olive oil.  The complete list and amounts can be seen at the recipe's website, I put a link at the end of this post.  As a side note, I only cooked 2 chops, the recipe calls for 6, so I cut all of the ingredients roughly in a third.  Wasn't perfect, didn't have to be.  I also had rice pilaf as a side dish; this was made from a box, yum!

First I mixed the flour, rosemary, salt, and pepper together on a plate and covered the chops on every side with the mixture.

Then I diced some garlic, put the oil and butter in a pan, and sauteed that diced garlic for about a minute.
The smell of sauteed garlic is super delicious!

Add the pork chops!  I cooked these for roughly 4 minutes on either side over medium heat.

At this point I took the pork chops out of the pan and set them on a plate to the side.  Then the balsamic vinegar and the chicken broth got added to the pan and I cooked that for approximately six minutes until about half the liquid was reduced down.

I then added the pork chops back to the pan and cooked for another 5 minutes, about two and a half on either side.

Simultaneous to the last few steps I was also finishing the rice pilaf.

And suddenly it was all done!  I took the pork chops out of the pan, one to my plate, one to some tupper ware, scooped some rice pilaf out on my plate, and chowed down!


This turned out very well and I am super proud of myself!  The pork was perfectly cooked all of the way through, but still super moist.  The rice pilaf was a great side dish, thanks to the box.  This is definitely something I will be making again and sharing with my friends and family.  I can't wait to have my leftovers tomorrow for lunch!

Now that I have a little more free time, I hope to be posting at least weekly, if not more.  This past weekend Robert and I also started our own vegetable and herb garden so I hope to be updating about that as well!  Hopefully throughout the summer we will have plenty of homegrown things to use in my recipes.
